Birthday Boy


I can't believe Matthew is 42! His birthday is close to the anniversary of when we met, 10 years ago. Happy Birthday, Matthew!







When it comes to birthdays, Danes put up Danish flags everywhere so we went with that. I made the cake- white cake with nutella frosting with chopped almonds, chopped Daim candy bar, and Maltesers (like Whoppers) on top. Olivia helped me frost the cake, put in all the flags and add the stuff on top. It was fun to make and pretty tasty! This is Matthew's all time favorite cake- here is the recipe:
Don't waste your time with the frosting in the recipe (it might be great, I have no idea). Use this Nutella recipe instead (can't find the source):

Nutella Frosting:
Ingredients for Icing: 
1 cup confectioner’s sugar 
1 cup Nutella 
5 tablespoons unsalted butter, at room temperature 
3/4 teaspoon pure vanilla extract 
1/4 teaspoon kosher salt 
1/3 cup heavy whipping cream 
To make the frosting: place confectioner’s sugar, nutella, butter, vanilla and salt in the bowl of an electrical mixer fitted with the paddle attachment. Mix on medium-low speed until creamy, scraping down the sides of bowl as you work. Add the cream and beat on high-speed until the mixture is light and smooth. 
Once cupcakes are completely cooled, frost with Nutella Icing.
